Silky Corn Soup

The beauty of this soup is that it is great hot or cold. If you are going to serve it chilled, I recommend pureeing until silky before adding the last of the corn kernels, and thinning it out with a bit more milk as needed just before serving.

Thai Coconut Zucchini Soup

This is one of those soups perfectly bridges the gap between summer and fall, when the nights start to cool down but the garden is still cranking. It is a symphony of dichotomies: creamy yet chunky, spicy and sweet, filling yet light. This is best with full-fat coconut milk. Since you’ll only be using 1/2 cup, you can freeze the remainder (or better yet freeze it in two 1/2 cup portions) so that you can pull it out the next time you make this recipe.

Chunky Vegetable Dal Stew

In our newest attempt to spread our love for the humble lentil, we created a satisfying chunky dal stew. We highly recommend full-fat coconut milk in this one, for the richness it lends. Roasted Root Tangle with Crispy Herbed Chickpeas and a Fried Egg

Think of this as a very dressed up "breakfast for dinner". You can prepare the egg any way you choose, but we recommend keeping the yolk just a bit runny- it will create the most perfect sauce to coat the rest of the dish.

Take-out reimagined for the home kitchen. Does it get any better than this? The toppings are highly recommended, for an extra fresh punch and crunch.

For those of you have never liked lentils before, this might be your ticket in. Try this one on a week night- it is simple, quick and kid-friendly. To amplify your veggie load, try adding avocado and coleslaw on top.

Mapo Tofu and Red Pepper

A play on a traditional Chinese dish, this meal excels in simplicity and flavor. Serve over rice with your favorite fresh herbs and a drizzle of sriracha hot sauce.

Sweet Potato with Crispy Chickpeas

Talk about hearty. Combining protein rich chickpeas with a fiber-packed baked sweet potato is a match made in heaven. So simple and so good.

Tempeh and Pinto Bean Chili

Talk about protein-packed! Between the tempeh and pinto beans, this recipe is stacked. The variations are endless - try adding frozen corn, chopped spinach, or roasted red peppers to amp up the veggies power. We like to serve it as a "Chili Bar". Set out the optional toppings and let everyone finish it to taste.
