Chunky Vegetable Dal Stew
In our newest attempt to spread our love for the humble lentil, we created a satisfying chunky dal stew.
We highly recommend full-fat coconut milk in this one, for the richness it lends. Since you'll only be using 1/2 cup, you can freeze the remainder (or better yet freeze it in two 1/2 cup portions) so that you can pull it out the next time you make this recipe.

Tempeh and Pinto Bean Chili
Talk about protein-packed! Between the tempeh and pinto beans, this recipe is stacked. The variations are endless - try adding frozen corn, chopped spinach, or roasted red peppers to amp up the veggies power. We like to serve it as a "Chili Bar". Seasoned tempeh, a fermented soybean cake, mimics ground beef in this taco recipe. Rich in fiber, protein as well as a range of antioxidants, tempeh is a nutritious vegetarian protein.
