Chunky Vegetable Dal Stew

In our newest attempt to spread our love for the humble lentil, we created a satisfying chunky dal stew.

We highly recommend full-fat coconut milk in this one, for the richness it lends. Since you’ll only be using 1/2 cup, you can freeze the remainder (or better yet freeze it in two 1/2 cup portions) so that you can pull it out the next time you make this recipe.

If you want to pump up the veggies even further, you could add a big handful of spinach or 1/4 cup of green peas in the last few minutes of cooking.

Chunky Vegetable Dal Stew

Cook Time: 20 mins
Yields: 2 servings


  • 1 tbs. oil
  • 1 small onion
  • 1 green pepper
  • 1 tomato
  • 2 garlic cloves
  • ½ cup split red lentils
  • ½ cup full-fat coconut milk
  • 1 cup water or stock
  • ¼ cup Oh! Veggies West African Sauce
  • 2 tbs. Oh! Veggies Fiesta Blend
  • Optional toppings: minced cilantro


  1. Chop onion.
  2. Chop pepper.
  3. Chop tomato.
  4. Mince garlic.


Heat oil in pot over medium heat. Add onion and pepper and sauté for 5 minutes, stirring occasionally, until onions are translucent. Add garlic and tomatoes and continue to cook for one minute. Add lentils, coconut milk, water/stock and West African Sauce. Cover and bring to a simmer. Continue to simmer over low heat for 15 minutes. Add Fiesta Blend, and remove from heat. Taste and add ¼ teaspoon salt if desired. Serve garnished with cilantro if desired.
