Crunchy Homefries

Potatoes have gotten  a bad rap in recent years. But like most whole vegetables, they have a lot to offer. Leave the skins on, which are loaded with fiber and magnesium, and spare them the oil bath, and they are a nutritious addition to your pantry. We love them gracing both our breakfast and dinner plates.

Crunchy Homefries

  • 4 cups water
  • 4 small potatoes, 2 cups ½-inch cubes
  • 1 tbs. high heat oil, such as grapeseed or sunflower oil
  • 1 small red onion, 1 cup medium chop
  • 1 tbs. Oh! Veggies Sesame Sizzle
  • ¼ tsp sea salt, optional


  1. Wash potatoes and pat dry. Do not peel. Cut into ½ inch cubes.
  2. Chop red onion.


Heat water in a small pot to a boil. Add cubed potatoes, bring back to a boil uncovered, and cook for 3 minutes. Test to make sure they are cooked through and soft. Drain and rinse with cold water. Heat oil in a large skillet over medium heat. Add red onion and sauté for 5 minutes. Add potatoes and continue to cook, stirring occasionally until potatoes are browning, about 10 minutes. Add Sesame Sizzle and stir. Taste, and add salt if desired.
