Lentil Sloppy Joes

For those of you have never liked lentils before, this might be your ticket in. Try this one on a week night- it is simple, quick and kid-friendly. To amplify your veggie load, try adding avocado and coleslaw on top.

Lentil Sloppy Joes

Yields: 2 servings


  • ½ cup green lentils
  • 2 cups water
  • 1 tbs. oil
  • ½ small onion, ½ cup chopped
  • ½ red bell pepper, ½ cup chopped
  • 1 garlic clove
  • ½ cup barbeque sauce
  • 2 tbs. Oh! Veggies Fiesta Blend Seasoning
  • 2 whole wheat buns
  • Optional toppings: ½ avocado sliced and/or ½ cup coleslaw


  1. Finely chop onion.
  2. Finely chop red pepper.
  3. Mince garlic.


Bring 2 cups of water to a boil in a small saucepan. Add lentils, bring to a low boil and cook for 18 minutes. Drain and rinse with cold water. Toast buns and set aside. Heat oil in a small pan over medium heat. When it sizzles when spritzed with water, add onion and red pepper. Sauté for 5-10 minutes, stirring a few times, until onions are translucent. Add garlic and continue to cook for one minute. Add lentils, barbeque sauce and Fiesta Blend and cook for another 5-10 minutes, until most of the liquid has been absorbed. Using a potato masher, roughly mash lentils. Serve on toasted bun, topped with avocado and/or coleslaw, if desired.
