Quinoa “Fried Rice”

Sometimes a seasoned favorite just needs an uplift to come into the 21st century. With all the flavor and none of the guilt of traditional fried rice, we prefer this version by far

Using quinoa in place of rice boosts the protein. Quinoa provides all 9 essential amino acids that our body cannot manufacture and needs to find from food sources.

Don’t be intimidated by the ingredient list- this one comes together in a snap with no more than two pans. Let your quinoa cook while you prep and stir-fry your vegetables.

Quinoa "Fried Rice”

Prep Time: 10 mins
Cook Time: 30 mins
Yields: 2 servings as a main dish


  • ½ cup quinoa
  • 1 cup water or stock
  • 2 tbs. oil of choice, divided
  • 1 cup green beans, ¼ lb.
  • I small carrot, ½ cup grated
  • 2 eggs
  • ¼ cup Oh! Veggies Sesame Ginger Sauce
  • 2 tbs. Oh! Veggies Sesame Sizzle Seasoning


  1. Place quinoa and water/stock in a small pot. Bring to a boil and turn down to a simmer. Cook for 15 minutes, covered, or until all liquid is absorbed. Remove lid, fluff and set aside.
  2. Grate carrot.
  3. Trim and chop green beans.
  4. Beat eggs in a small bowl. Season with a dash of salt and pepper.


Heat 1 tablespoon oil over medium heat in a large pan. Add beaten eggs and scramble quickly. Remove to a small bowl and break up into small pieces. Wipe pan clean. Add remaining tablespoon of oil to the pan along with carrots and green beans and stir-fry until bright and tender, about 5 minutes. Add cooked quinoa, scrambled eggs, Sesame Ginger Sauce and Sesame Sizzle and continue to stir-fry for 3 minutes. Taste and adjust seasoning with salt or soy sauce and chili flakes if desired.
