Black Bean, Spinach and Fried Egg Bowl

Are you in the mood for breakfast? Whether its morning, noon or night, this will do the trick!  I love this dish, not only because it is easy to make, but because spinach fuels my body with crucial nutrients to keep me going all day long.

 

My Recipe

Prep Time: 5 mins
Cook Time: 15 mins
Yields: 2

Ingredients

  • 2 tbs. butter or oil (divided)
  • 1 can of black beans
  • 2 tbs. Oh! Veggies Fiesta Blend
  • 4 cups baby spinach, 3 oz.
  • 2 eggs
  • ½ avocado, chopped

Prep:

  1. Drain and rinse black beans.

Directions:

Heat one tablespoon of the butter or oil in a large sauté pan over medium heat. Add spinach, black beans and Fiesta Blend to pan and sauté until wilted, covered, about 5 minutes. Stir, and remove on to two plates. Wipe pan clean if needed. Add second tablespoon of butter or oil and fry or scramble eggs. Season with a pinch of salt and pepper. Place eggs on top of spinach and beans. Top with chopped avocado.
